Description
Helianthus tuberosus. 3.7L coir pot.
Native to North America, this perennial vegetable offers starchy tubers that can be eaten raw or cooked.
Harvest the tubers in late autumn when the stems have died back. Leave some in the ground and they’ll sprout in spring.
The tubers have a sweet, nutty taste similar to water chestnuts or young potatoes.
The yellow, sunflower-like flowers are lovely.
This spreading, vigorous, hardy plant enjoys a full sun position in well draining soil, and should grow around 2m high.
Water regularly but avoid overwatering.
