Delicious in Thai soups and curries, Galangal is a perennial herb offering rhizomes with a flavour between ginger and pepper.
The dried rhizomes have been used as a spice in Europe for over a thousand years.
In Russia, they are used to flavour liqueur and vinegar.
The leaves and young shoots are also edible.
The plant enjoys a warm, part shade to full shade position in free draining soil, and should grow about 2m high by 1m wide.
Rhizomes can be harvested for most of the year.
